Nothing here has to be decided before launch. Adding a gallery or a booking system to a site that is already live costs the same flat price it would have cost on day one.
The one thing that changes is scale. A services page with sixty items and photography is a different job from one with five lines, and both are priced separately on the price list so you can see which one you are.
